:: ingredients ::

Flour- 1/4 cups
Sugar- 2/3 cup (I used xylitol for this particular batch.)
Baking soda- 1/4 tsp 
Salt- 1/8 teaspoon
Cocoa- 1 cup
Softened butter- 1cup
eggs- x2
Vanilla extract- 1 teaspoons
Mint chocolate chips- 1 2/3 cups

:: directions ::

1. Heat up the oven at 375 degrees. 

2. Mix flour, sugar espresso granules, and baking soda for 10 min on high. Add salt and vanilla extract and mix for another five min. 
3. Place the butter in the top of a double boiler or in a small metal bowl over simmering water, add the cocoa to the butter. 
4. Gently fold the chocolate mixture in to the eff mixture until partially combined. Add the flour mixture to the batter and gently fold it in. Fold in the mints. Set aside batter for five minutes to thicken. 
5. Drop a tablespoon of batter onto the prepared baking sheets and bake until puffed and cracked, about 9-11 minutes. Cool on the wire rack for two minutes before serving.
